Ambervale Cabernet Sauvignon.png

Eden Valley from Barossa region, the residents have long revered the legendary Cabernet-based wines of the region. The potential for this grape variety shines in Eden Valley, especially in mineral-rich soils akin to those at Ambervale vineyard. The 2019 vintage, despite challenging growth conditions, yielded concentrated fruit, resulting in an intense, perfumed wine with a robust structure capable of aging gracefully.

Each grape is hand-picked and meticulously sorted before undergoing a gentle fermentation process using indigenous yeasts. After fermentation, the wine matures for 23 months in a blend of new and seasoned French oak barrels. This meticulous approach ensures a wine of exceptional quality and character.

On the palate, the Tarrawatta Ambervale Cabernet Sauvignon presents rich flavors of dark berries, cassis, and hints of spice, all elegantly balanced by fine-grained tannins and a touch of well-integrated oak. This wine offers a long, satisfying finish, making it an excellent choice for special occasions or cellaring to enjoy its evolving complexity over time.
